Rodrigo Pacheco is a celebrated Ecuadorian chef and FAO’s Goodwill Ambassador. His passion and devotion to regenerative gastronomy have now led him to advocate for the urgency of restoring our world’s ecosystems. Currently, he is developing an extremely biodiverse corridor in Ecuador running from the Pacific Coast to the Andean Choco, and crossing five different ecosystems and microclimates. The project is an evolution of his work and efforts of the past 9 years innovating in the culinary and gastronomic arts. His well-known restaurant Bocavaldivia uses ingredients made under pristine agricultural conditions in companion with fishermen and local permacultures; they have connected their meals to the ancestral culinary past of the Valdivian culture. His respect and care for nature have drawn awareness of political leaders, activists, CEOs and many more to establish a new paradigm to relate with the environment and propose the creation of the largest edible forest in the world,
